Question about ROLs and type of volunteer

So I should start to ask for 3 ROLs soon. I notice that majority oh the school require 2 from science professors. Could both of them are from biology, or it should be 1 bio and 1 chem, I tend to have more faith in my bio professors, even though I got really good grade in chem as well. Not to mention that the 4 chem classes that I took were back in community college, and somehow there's a myth about those that are not from a PhD would be less value ( correct me if I'm wrong). Beside that, I had a really good professor back when I took molecular cell bio, she is a PhD but she teaches in community college, the thing is she knows me really well and I stand out in her class as a student. If I got to ask for 2 letters that are from Biology professors, should I consider to contact her for this or it has to be someone from my University? If anyone have any experience with this, I need your 2 cents.

Another question relates to my volunteer experience. Let's say there was a summer I helped people at a private security office by organizing papers and documents, taking trash and cleaning stuff, and I got pay NOTHING for it. Could it consider to count as my extra curriculum ? Oh and sometimes in between I helped taking care of the owner's kids, spent time to play and tutor them for a bit, should I include it in my application?

Don't know about your volunteer question, but for my LoR's I had my microbiology professor, my microbiology lab professor (who I TA'd for), my anthropology professor and a dentist I shadowed write my letters and they worked fine.
 
I would just ask the professors who know you best and will write you the best letter. Biology is a science, so two LORs from biology professors would count as two letters from science professors. The content of the letter is more important than anything else, so get them from the professors who will write the best things about you.

Put the experiences you listed on our application. I'd say put it under extracurriculars since you didn't get paid for it. List the babysitting and tutoring as a separate activity, since it is a completely unrelated to your role as an unpaid office assistant.
