So I've narrowed down to 1 school- but if I'm not sure if I will be attending this school, since I'm on other waitlists and may potentially consider those as well, do I still HAVE to select "plan to enroll" on AMCAS? Is it ok to not do anything at all?

1) You MUST PTE. If you dont, your current acceptance will assume you arent going to attend and can rescind your acceptance without notice
2) you can remain in WL and take that acceptance if offerred
3) dont live in hope of WL... you have an acceptance

And we have until tomorrow night to do this ?
