if you have any experience with this, please chime in.

If you don't get what you want in the scramble. And don't want to do prelim, transition, research years,

how viable is it to do an MPH while going through the match a second time?

I have certainly seen this done. It will only help if an MPH would further whatever career you're interested in. Also, it assumes that it's not too late to apply to MPH programs for July. It's not clear that an MPH will make you a more competitive candidate, so you'd need to think about why you didn't match and what you could do differently next year.
 
One advantage of that approach may be that you could hold off medical school graduation and do the MPH as a dual degree student. That way next year in the match you would still be a "US senior".
