I would think most schools would want a science LOR from professors of chemistry, biology, microbiology, physics, anatomy, and/or physiology. However, you would be best served by calling the admissions office at the particular school that interests you to find out for sure. It never hurts to have an extra letter, so you might as well get a LOR from your nutrition professor if you expect it to be a great LOR.
Nutrition would be considered a science letter. The content of the letter is what really matters, not the science discipline of the professor. After all most nutrition classes cover basic physiology and biochemistry concepts.
