The vast majority of programs are only interested in your medical school career. However, there are some of the more competitive programs, like Integrated/combined Plastics that may ask for undergrad transcripts and MCAT scores.

Another major/minor isn't going to make a significant difference in your application for medical school, especially if it results in lower grades, and it really won't make a difference for residency. Spend some time doing something medically interesting (ie, a mission trip if you can swing it, some researchm etc.). The more competitive residencies who do look at your undergrad record, are really interested in academic performance, research and interesting ECs rather than whether you had a double major or not.
 
Hey man-
By your post, I assume you have already been accepted into medical school? If you have, I would not bother picking up more majors. A PhD looks nice to a program director, and is huge in some fields like Rad Onc, but a undergrad triple major in Bio, Music and Field Hockey (or whatever) probably aren't important- unless they are important to you. If that's the case, then by all means go for it! One useful degree I wish I had had time to pick up is an MBA.
