I'm taking a gap year and volunteer weekly and biweekly at different places. Right now I have low hours (~100 clin/~40 nonclinical). By the time I apply i'll have a little under 200 and 80. But I will continue to do this and will be doing Americorps. Will this look bad and should I take a second gap year or only do 1? (Rest of my app is fine).

it's not as much about the hours, but the experiences you have. I have heard to try to shoot for 50 hours of shadowing and that's what I did. All my interviewers thought I had plenty of shadowing. If you want to take a second gap year for yourself do it, but not to boost your volunteering, you're fine. You can also put projects hours into your application i believe for amcas.
 
While quantity of hours shows commitment, quality allows for stories during application and interviews.
