Rank the following in order of increasing solubility in water: a triacylglycerol, a diacylglycerol, and a monoacylglycerol, all containing only palmitic acid.
If you can explain your answer it would be greatly appreciated. Thanks

From what I remember, water solubility increases with polarity. More polar, more soluble. Acyl groups are non-polar, polarity would increase as follows tri<di<mono. Please correct me if I'm wrong, took the DAT 9/2006.
