Silly question: I worked a part-time night retail job to help pay for some living expenses in my senior year. Obviously it has nothing to do with medicine and isn't meaningful to me in any way. However, would it be good to include this, showing that I worked during college? I worked at this job for 15-22 hours/wk during school and 40+ hrs/wk over every school break.

Yes, let them know that you are able to manage time efficiently while performing well in school. It also demonstrates initiative and maturity. List your employment.
 
Another question about the application. I am doing clinical research this summer (but my app will be sent in June 1st). Can I put this on my application even though I haven't started yet?

AMCAS does not let you add future dates, so depending on when you start and when you submit you may be unable to add this on your works/activities list. If you don't add it, then it's something to talking about during interviews or updates.
