Could I apply and get an interview invite if I didn't complete 4 of the med school prereq. classes (orgo 2, orgo 2 lab, physics 2, and physics 2 lab). I'll be a senior in fall and I will complete these remaining med school prereqs. classes in the summer and fall 2009.

Yes, you can apply and get interviewed without having completed all of your pre-reqs; what matters is that you complete them prior to matriculation, and it looks like you'll have that down. What about your MCAT, though? Did you already take it without those pre-reqs? If not, when are you planning to? If you haven't taken it yet, the MCAT may make you quite late to the game.
