I have decided on a few options.

1) Get a third major in Psychology, which makes my last fall and spring full loads 15 hours, and I retain the ability to graduate at any time, if I decide not to complete it.
2) Get a third major in Psychology, go with a less stressful schedule, but I weave my ability to graduate until after Fall 09.
3) I just stay in school taking classes, that will not grant me any other degree, to get my BCPM GPA up and my UGrad GPA. During this time I complete my honors in the major, and I retain my ability to graduate at any time, with a less stressful schedule.

I do need to get my GPA up a bit.

Without more information this seems like a no-brainer... Option 3, definitely...

Without knowing definitions of "my GPA" and "a bit", I guess I'd go with number 3 too. Knowing information about the evaluations of the courses you'd be taking on each of the three tracks would be critical for my informed decision.

I'd go with number 3. you could also spend the time working on Extracurricular activities to "stand out"

3.8 For both
Have not received my MCAT scores yet.

My concern is I will not make it into medical school. I want to have the greatest number of options if that is the case.

W/ a full load, it could raise to ~ 3.9, 3.9 BCPM w/ All science courses.

W/ a full load, it could raise to ~ 3.6, 3.7 BCPM w/ All science courses.

Work on getting the gPA up regardless of the third major unless for some compelling reason you want to become a psychologist specifically.
