Quick Secondaries Question

Quick question...on secondaries, if it asks for a one page essay, should you aim for exactly one page? And is that double spaced or single?

Also, on questions that ask if there is anything else you'd like the admissions committee to know....is it important to write something? And what topics are usually covered that aren't covered in the essay?
