If say you play guitar and/or fix cars as a hobby...

do you think it would be good to put that in your amcas works/activities? I ask this because it could be seen in a good light that I am comfortable with my hands and have a knack for fixing things?

I went ahead and put down that I played guitar. It's something I really like. Will it show I'm "diverse"? No. Will it look like padding? Probably. But I like it so I threw it in and just said whatever

I'm personally leaving less structured hobbies (cooking, hiking and running) off of my primary but chances are good that I'll find a way to work them into a secondary or two. If you have a lot to say about them, you might as well go for it though.
