I'll be done with pre-req's just finishing up major stuff and I'm looking at like 1 science class per semester. Like, my roommates are poly-sci and art history, why can't I have that for a semester 😢

I'll still be working, doing my internship and lab work so it won't quite look like my CV just fell off a cliff after I sent out my secondaries.

There isn't going to be a problem with that I'm sure. If it is brought up just say you are using your time to pursue non-academic things that are still relevant. I am graduating a semester early so I can spend more time working in lab and volunteering. Just use your time wisely!
 
It seems like a little bit of a gamble. While I was interviewing, no one seemed to ask about the classes I was taking, but did seem to ask about classes I took in past semesters. I guess it makes sense that my transcript wouldn't list grades for classes I'm currently in. The reason I think it's a gamble is that if you don't get into medical school your first time around, then the classes you took as a senior would likely be a topic of discussion in an interview the following year.
 
Classes I took my senior year included: intro to theater, dance choreography, a "journalism" class that was basically about twitter, a sociology class about drugs... even the senior bio seminar I took had "vampires" in the name. Nobody questioned my class choices on the interview trail. If anyone had, though, I would have been happy to explain how valuable I think it is to have a well rounded, multidisciplinary education...
 
I didn't take any science classes at all my senior year and was accepted!
