Im a nontraditional student and I took A&P without a lab section (school splits up lecture and lab into separate courses), and was going to take the lab course this summer and also ask him for a letter of rec. Is this okay if it's a professor who teaches a lab course? It's pretty much it's own course in terms of material and examinations, and the professor is a legit professor (PhD) not just a TA. (For the science professor requirement)

That is totally fine. Schools just specify that it must be a science professor. A&P lab should be listed as a science. Also, usually a professor will get to know students better in a lab setting anyways.

I used a LOR from an A&P lab instructor (who is also a professor) this cycle and it worked for me.

Also here to confirm that a LOR from a lab professor is fine. I had a comittee letter with 1 lecture professor, 1 lab professor, and a dentist that I shadowed.

You want to call the schools that you are planning on applying and ask. Some of the schools that I applied to specifically said they don't accept LOR from lab instructors.

Which? Lab instructors as long as they hold PhD or MS are fine. Perhaps you didn't clarify in your question to schools and they said no since often times the lab instructors hold neither.

For instance, USC specifically says letters from lab-based professors will not meet the requirements. All my lab instructors had either MS or PhD degree. But like I said, look into the schools you are interested in and ask them to double check.
