My exam is in a week and I've taken two Kaplan practice tests and have gotten scores that are really bad (AA:-17) Should I reschedule my test to a later date?

Take bootcamp practice tests (first one is free, but I don't know if you can take a full length one, but I do know you can do it by sections) and see how you do. That's more representative of the real exam. I don't know too much about Kap.

Are you using any other resources with practice questions to gauge how well you know the material?

Yeah postpone to a month+ from now. It's hard to get from 17 to 21 in just a week. But like others suggested, try bootcamp free test first, also Qvault has some free tests too.
