Hi,
I am currently working at a research lab, where i get credits in the anatomy department for working there. It shows up as an independent study on my transcript. my question is: will the grade i get assigned for this research count towards my science gpa, or will adcoms filter out the research and get a gpa based purely on actual science classes?
Just curious how this works.

I would think it would count as science.
 
Is a specific department signing off on the work you're doing? If so, it may fall under that category. For instance, I'm about to start research in the biology department. Since the department chair has to sign off on the credits, it is counted as upper division biology credit.
