I've heard that applicants are encouraged to stick to a project for a couple of years or so, to show dedication.
I'm undecided between being a statistics or industrial operations engineering major, and my research has primarily been at the statistical consulting center at my University and designing clinical trial pilot studies, these two projects were only a year each by nature. And I'm looking for another project for next year.

I don't want to look like an un-dedicated guy, should I just explain that each project was only for a year max?

It's more what you get out of the experience than how long or what you do. You should do enough research where you can passionately describe your project(s) during an interview. At least, that's my two cents.
