I'd at least do some research into what the lab is currently researching, be able to say why you're interested in policy [and experiences with this], be able to talk about your past research experiences, and your professional goals. It may also be good for you to know off the cuff how many hours/week you could dedicate to the research, and when. If this is your first time in this field of research, they should understand that and will hopefully be the kind of lab willing to mentor you! Or point you to a lab that will be! Good luck!

Other than that, they may ask you to talk a little about yourself, your interests, etc... be prepared to talk about yourself!
