Can people do residencies after working for a few years, or is it limited to new grads from pharmacy school?

You can still apply for a residency after a few years, but you'll have to make sure you keep up on your clinical knowledge to be up to speed with the new grads.

You can, but I think it's difficult after working a few years and earning a full salary to taking a huge paycut with the stipend you receive during you residency. That's especially true if you have a family and/or you are supporting other people financially.

I was thinking about paying off loans for a while and maybe going back later for a residency. Can loans be deferred while doing a residency?
