Do DO schools accept the grades and grade replacement for those who take science classes as a non-degree/non-matriculating student? Or do you have to be enrolled as a degree student in a university somewhere? I've graduated from undergrad and only need a few classes to meet the prereqs and one to retake.

Yes, they accept grades if you are taking them as a post-bacc, which is what I am doing. I think a lot of people do it this way.
 
Yup, user above is right. I took a year worth of retakes through an Extension program and I heard that was fine.
