Retracting an LOR after being verified

I've been verified by AMCAS and awaiting secondaries. I am a nontrad and I've been out of undergrad for 3 years. Back in April my neuroscience professor agreed to write me one but told me to contact him in June regarding the letter since he was going to be busy until then. I've emailed him 3 times since the start of June and I haven't gotten a response. I will call him tomorrow, but I want to prepare for any scenario.

I technically don't need his letter but I do need to ask all the schools I've applied if it's okay to substitute one from work. Without his letter, I have 4 letters. 1 physics prof, 1 portuguese prof, and 2 MDs from work.

Are you able to retract an LOR from the list of LORs you are submitting to a school, if the writer has not sent it yet and you have already submitted?
 
You have the opinion of selecting which letters you want to send on a school-by-school basis. If you don't select the said letter, it wouldn't be used.

If you did, see above.
 
Just change the letters you assign to schools. Don't worry man.
