Here's my experience with my LORs and interview invites:
- NJDS extended an interview invite to me before receiving all of my letters (only 2 were received when I got the invite), but everybody else seems to have been waiting on ALL my LORs to be received. NJDS claims to require 2 science prof, 1 'other' prof, but I have not submitted a non-science prof letter at all to any school.
- Case sent me an interview invite after receiving 2 science prof LORs. All they require is 2 science prof letters.
- Buffalo requires 3 science prof LORs - my 3rd science prof uploaded their letter to AADSAS on 9/22, and I received an interview invite on 9/30. (My 4th letter, from a dentist, had been uploaded on 9/27, but I'm not sure if that played a role in the interview invite.)
Even though all my letters are on AADSAS, the schools have only gotten two of them (the first two science prof LORs). What made me mad was that I added Stony Brook late (Sept 13), and although they sent out my application on Sept 29, they only sent 2 of my 4 LORs, even though the final two were received by the time AADSAS sent out my app to Stony...
Oh and, WVU said they required a physics prof letter since I didn't submit a committee letter. That letter finally got put in the mail today, according to my school. I'd really like to score an interview there and I'm hoping they were just waiting on the physics letter to extend and invite to me. I guess I'll find out!

Additionally:
LAST cycle, I chose the committee letter route and the letter was not received by AADSAS until LATE November; by then, Temple and Maryland had already rejected me outright (on the same freakin' day, too). I eventually got rejected from Pitt and NJDS. So, schools
will reject you without letters... I learned that firsthand. I couldn't risk it taking that long for my school to send out a committee letter again, so I chose the individual letter route this time.
