If a school has a rolling admissions policy but doesn't extend the first acceptance offers until the end of December, does it matter if you interview in September, October, November or early December? I teach high school and it would be great if I could interview during the winter break without hurting my chances of acceptance.

The rule of thumb is, earlier the interview the better chance you have of getting in, earlier spots may interview 10 for 8 spots where as later ones may only take 4 out of 10. You are better off interviewing early regardless of when first acceptances are giving out
 
Really, it depends on how exactly the school works (which is largely inscrutable). To be safe, I agree with above. The sooner you interview, the less chance you get screwed.

But it is possible that any given school operates with the policy that all applicants that interview before date X are given equal consideration for the first acceptances. In which case, as long as you interview before said date, you're golden.
