So long story short, I was waitlisted for Azusa Pacific University for Spring 2020, however, they sent me an email giving me the option to roll my application over for consideration in the Spring of 2021. If I decide to go through with it, does this affect my chances of getting into the other programs that I applied for this current cycle?

This is a good question. Did you email them back and ask?

I don't think so. This appears to be them saying "Hey if you want to reapply for next cycle, we can just re use your application". That shouldn't affect other universities' decisions

Does not affect your chances of getting into other programs. Definitely roll the application if you are still interested in Azusa.
