Which of the following result in the conversion of a proton into a neutron?

I was able to get the correct answer, which is Both positron emission and electron capture, but his explanation is throwing me off.

I have attached a copy of the solution. Can someone explain those equations? How are those turning a proton into a neutron? I am not seeing it (especially the balancing out of charges). Also for electron capture, the electron is supposed to be in the reactant..why is it in the product?

I just re-watched his nuclear chem videos moments ago and if you do that too, it'll all make sense.
