I'm taking both summer months plus next semester to finish my prereq plus study forma the dat to apply this cycle. Is this rushing? I'm 29 years old and I want to get in as soon as possible.
Are you referring to this cycle that opens up tomorrow? I wouldn't really expect you to have a lot of time to study for the DAT, take it, and submit your scores on time - not to mention all the pre-reqs you'd be missing at the time of application. What courses have you taken so far? When do you plan on taking the DAT?

Spread them out. I'd honestly focus exclusively on the DAT in the summer, do physics 1 + math in the fall, and physics 2 + english in the winter. You just need to get them done before matriculation.
Doing all of that on top of the DAT is almost guaranteed to drop your score. If you do all of it at once and get wrecked on the DAT and in your classes, you're hosed for admissions. No need to even make that a possibility! Spread them out.
If you are deadset on applying this cycle, i would take the physics math and english next year and just focus on the DAT this summer.
If money is tight and you don't want to take classes next year, i would say it is definitely possible to do what you are asking... it just lowers your odds of success
