So I'm starting to get some interview offers, which is nice. I'd like to schedule them and then later decline some if I happen to have overcast my net. Since fellowship is a smaller world, it shouldn't be too big a deal right? Programs won't be annoyed by this right?

Nope, it happens. They'll have plenty of other good applicants to offer interviews to.
