I would also add Tufts and Pitt if you're interested in applying there. I feel you have a shot at those schools as well.

45 shadowing hours is on the low end of what most schools recommend/require. I'd recommend at the least you double it. The closer to 100 or more, the better.

I know the number is low, but keep in mind that my volunteering program involved shadowing as well. So the number is more than 45. I also feel as if I have some unique pre-dental experiences with my lecture and lab course. I really don't want to wait too late into the cycle. I feel as if that would be worse.

No need to wait on submitting your application...you can always email admissions to keep them updated as you make progress in relevant areas of your profile (i.e. Increased shadowing hours: where/how many. Discuss ang future plans as to how many more you expect to complete by a particular timeframe and mention that you'll keep them posted for any other changes).
