1) litmus test, to both gauge and filter out applicants based on how serious they are about attending. If you cannot get a transcript or two sent their way, you obviously are not serious about attending their school.
2) Having the actual transcripts, at times, can present new information than what the AADSAS sends the schools.

It is no different than when you applied to undergraduate college. The school needs official records of your college level courses the same way your college requested official transcripts of your high school courses so that they could verify in their records what you had done met their admissions requirements. They cannot take a second hand copy as being official.
AADSAS sending your course info, even if they copied your official transcripts that you sent to them, is a second hand copy, one that has been handled by a party other than the school from which your transcript came itself, so it cannot be used for that purpose.
