scut out

Not that I'm any authority, but I think being "scutted out" means being completely occupied by menial tasks ("scut"), so much that it interferes with the educational process. I imagine that these things would include chasing lab results, doing blood draws, etc.
 
My understanding is that it is grunt work that you are made to do as an med student/intern/resident. This term is pretty new to me, as well.
