When do the second wave of acceptances come out typically? I know that deposits are due Dec 31st, but does that mean that schools then begin reviewing applications again or do they already have applicants chosen?

it depends on the school
most schools will send out further interview invites and acceptances once they are sure of their current count
some have ranked lists, some have groups, and some schools will start all over with reviewing
not worth worrying about because there are so many variables
