I think most schools like it if you use the committee if your school has one.

My school had a committee but I chose not to use it. I had good relationships with a few professors so I just used them. I reasoned that I could get much stronger letters from professors that knew me really well than from the professional committee. It never came up at an interview, but if they asked this is what I was planning on saying
