During my gap year, I spent around 20 hours a week tutoring high school/college students in history. For high school students, I help clarify facts and prepare my students for the AP history exams. For college students, I help them with writing papers, identifying major themes in history, etc.

I love what I do, and I make decent money. However, everything is "under the table" as I am self-employed. What am I supposed to put for the contact person on AMCAS? Can I put myself and explain it at the interview?

Just put yourself. It will be obvious from the description why you listed yourself and AAMC doesn't really care about the references you list anyways.

You don't need to explain this at an interview either.

put someone you tutored regularly

Any of the above, or even your mom/dad or a friend who knows you tutored. You should use yourself as a last resort, but it won't be a red flag anyway (since they'll understand from looking at the description).
