Any suggestions on DOs that are willing to let students shadow them.

I would check out the Tennesse Osteopathic Medical Association. The have a "Find a DO" search.

I agree! I did this and found 2 DO's that were willing to let me shadow them in a day. Infact, it was the president (I think) of the CTOMA. Good luck!
