Through a crazy coincidence, I met a CRNA (Certified Registered Nurse Anesthetist) and he offered to let me shadow him. Anestesiology has always been a specialty area that I have been interested. However, I am going to medical school, not going the RN route.

Can I still include this in my AMCAS shadowing hours?

I think you can count that as clinical experience hours, but for shadowing hours, it has to be a doctor for medschool. If the adcoms here tell you otherwise, then I stand corrected...

I included PA shadowing and nobody batted an eye, just make sure you have plenty of PHYSICIAN shadowing. The whole point is being able to say that you want to be a physician, and you don't learn that by shadowing non-physicians. I'd take that person up on their offer, though!

You may decide to do gas later on and be glad for the early exposure, but it's equally helpful if it rules you *out* from wanting to do gas as well

Sure, list it. Be able to describe why you are choosing one over the other. If you are asked a hypothetical question about what you would do if you couldn't be a doctor (reapplying is not an option, the profession is completely off the table), you might want to mention your exposure to that profession and why it is attractive to you. If it isn't attractive, maybe you have other experiences that would lead you to say chemist or teacher, or sales rep for a medical device manufacturer, or whatever.
