I want to start shadowing a dentist to increase my chances of acceptance to dental school and also learn about the profession at the same time. My dad is a dentist and I wanted to know if schools would look down on the fact that I shadowed him.

I think they would. Shadow another dentist so you can learn more about dentistry.
They might know something is fishy if you have 10000 hours shadowing your dad.
not that I haven't learned from just being his son, believe me I have, I even spent a summer as an assistant and doing work around the office. The thing is this was going into my junior year of high school and doesn't apply now. I think dental schools want to hear a little more than "well my dad does it."
I'll look into shadowing another dentist, I think there are three others in his building alone so I'm sure I could set something up.

You can still put that in, the vast majority of my shadowing/assisting time was during my junior year of highschool, 6 months of so. I even mentioned this during my "Why dentistry" answer, and it really didn't seem to be an issue at all. Although you can't ask your dad for a letter, and so you should try to shadow another dentist (or specialty), shadowing/assisting with your dad will still likely help you in the long run, Good luck!
