Is it possible to shadow and/or interview a doctor in the military before I actually decide whether it's something I want to do?

There are programs available through recruiters and HPSP offices that arrange these types of visits. There was a thread on here about visiting San Diego.

Informally, you might just call up the nearest MTF with training programs and ask to speak to someone in the GME office. I'm not sure if that will be kosher or not.
 
I visited a base with my recruiter before I signed my contract. We hung out all day with a flight surgeon. He was candid about his job and what he liked and disliked about military medicine.

There's a thread somewhere that is a who's who of this forum. Consider PMing those on the thread you want to talk to. I'm sure a few would be willing to talk to you on the phone for a few minutes. I've talked to a couple dozen pre-meds I've met on this forum over the last 5 years. There are pre-meds, med students, interns, GMOs, residents, staff docs about to get out, staff docs that just got out, and lifers on here. Few would turn down a phone call from you.

As far as shadowing, you might mention what area in the country you are in.

Yes. When I was a senior resident an undergraduate student shadowed my team for a day or two. It was arranged through the recruiters at HPSP. If interested but still have questions, talk to a recruiter near you and I am sure they'll be happy to arrange something for you. The military is hurting for recruits into the medical corp.
