My schedule has shifted quite a bit from what I had originally submitted on my AMCAS. At the time I submitted my application, I was working about 25 hours per week and participating in three hospital volunteer programs. As it worked out, I ended up dropping one of these programs because 1) I upped the hours on my work schedule and 2) I tried on two occasions to go through training for the program and the director ended up having to cancel on me.

So I've just gone along, working 30 hours per week with the two volunteer programs. One volunteer program ended, and I upped my work hours to 35 per week plus taking on duties on the farm.

Now I'm about to start another volunteer program.

This all gets terribly confusing, and I really don't know what my schedule is going to do from week to week. It all depends on what is going on at the farm and what our needs are at work.

Is this something I should be telling schools? Or should I wait for an interview?

tough to say. i dont think its important unless you get an interview at the school...update them after the interview.

no, if and when you get an invite, you may take an updated copy of your current transcript (printed from your school website) and give to admissions secretary to put in your file. No biggie until after you've been accepted because they'll ask for your final, official transcript later. Of course, this is assuming you are not dropping any of the "required" courses needed for entrance. They understand seniors change their schedules and if everyone sent updates of every little change, they would be swamped with unnecessary papers for the Admissions people. I changed a couple classes. It didn't make any difference and I was never questioned about it. I still had a required class to fill in my last semester. All went well. IMHO

I agree, that's what I would do. They don't want all the additional paperwork from everyone who changes something. Just make sure you bring evidence to show you started these programs and offer an explanation, so they don't think you padded your resume.
