Should I take classes in the Spring?

Low GPA, upward trend.
Do not need any classes to graduate. But due to the lovely financial aid system at an expensive school, I will still be paying the same. They cap you at a certain amount and the living/food costs more than that and I signed a year long contract.

I'm thinking of taking one 100 level Bio class (not BS class made for non-majors), an Astronomy class, and research credit.

But then again, I could work full time in a hospital or volunteer in the community as my ECs, especially non-medical, are hurting?

If you have a low GPA, you want to prove yourself with rigorous science courses, not 100 level biology and astronomy, I'm afraid!

Note that with 120 credits already, 3 classes will not affect your GPA tremendously... your time might well be better spent elsewhere. If you have other weak points on your application, you might want to focus on those instead. It's your call really.
