I am entering my third year post-graduation and currently working at an academic medical school performing research. I have sent in my application, but would it be to my benefit to take a class over this year for academic purposes to show schools I'm still academically up to par? I am wondering if this is ever brought up on admissions committees. What is everyone else's thoughts?

I've read there's a school that likes to see demonstrated academic prowess in the last six months before application. I think it's more common to see concerns expressed after two years, but this is not universal. For general purposes, taking additional coursework after a three-year break is a good idea, IMO. But before proceeding, be sure most of your schools will allow update letters so you can inform them of new grades after fall term is over.
