Can I take education classes in place of sociology? I sociology even a requirement at most med schools? I took an education class about the issues in our society and how that shapes education

You need to check the MSAR for pre-requisites at the schools to which you plan to apply. They vary a lot.
If a school has a sociology requirement, you could submit the syllabus for your education class to that school and ask if it would suffice.
