standout ECs?

They probably found a cure for cancer while volunteering in a rural village using nothing but sunlight, water, and essential herbs
 
Something that you're passionate about that you can take very far and leave behind something tangible/memorable, whether it's a publication, an organization, a community project, etc.

Something that when an admissions committee looks at they say, "wow, person ___ doing this is something that can really help contribute to the diversity of our class /make them a productive member of our student body ".

Just my 2 cents. I'm expecting a million nature pub/rhodes scholarhip answers. Those things are great also. But I've met a lot of stellar people who fall more under what I outlined above.
 
Nobel prize quality research, several substantive papers (not merely lit reviews) in high impact journals, Ph.D. in a science related field, successful multi million dollar medical start up, forming a successful charity with years of personal labor, etc.

That's what I think of at least.
 
So for someone with an average MCAT score and average GPA, what do people consider stellar ECs? Like what do people mean when they say "...oh but I had standout ECs"
I have a fondness for :
Habitat for Humanity
Peace Corps
Military service
first responders
teachers or TFA
Americorps
Hospice work
nursing home work
work with the developmentally disabled or mentally ill

(TLDR, working with patient populations that put you up close and personal with our mortality)
