Starting a second bachelors but not finishing it...

If you start a degree program, and/or get accepted to a major, that tends to show up on your transcript.

Acceptances to med school tend to be contingent on completing programs in progress when you applied. You have to petition your med school to get out of completing a program.

Funding for a 2nd bachelors is not the same as funding a 1st degree. You won't likely find yourself eligible for grants and scholarships, and federal loans may be limited to just one year of $12,500.

Those are the risks. The benefits are easier to see.

Taking the post-bac courses as an informal program should be cheaper if you're a matriculated student (i.e have chosen a major) than if you are not.

Should be simple for committees to see, so long as you go and do what you need to do for prereqs, and not jump headlong into unneeded courses and semesters. You could also ease your mind and supply your post-bac intentions in your personal statement. I doubt you'll get a odd look.
 
Taking the classes as a post Bach or part of a non degree program doesn't matter. I am taking a second Bach and my adviser designed my schedule knowing that It was unlikely I would graduate. The only issues I have faced have been from the Department heads who are trying to get me to do extra classes and even went as far as requesting the contact information for the local Medical school that I contacted to verify the requirements. If the school administrators find out that you are just using the program to meet your Med school admission requirements it might piss them off as they want to admit students who will likely graduate; in terms of Med schools though; they wouldn't glance twice. They are just making sure that you complete your Pre-Reqs at an accredited institution and meet all the minimum requirements to apply.

Will it be a huge deal for adcoms if I were to do something like this to finish my prereqs and boost my GPA instead of doing a formal/informal postbac at a community college or 4-year uni? I have maybe 6-8 courses of prereq I need to finish and since some of them have labs it's going to be hard to get a seat at my local uni without any formal student status...

Many people do this, so no, it's not a problem.

Yup. Exactly what I did. It's almost impossible to get the classes you need otherwise.
