From amcas 2006:

Postbaccalaureate Coursework is included in the "Undergraduate Total" GPA as well as in a separate "Postbaccalaureate" GPA.

does this mean bio/chem/physics/math classes taken in post-bacc can only increase the total gpa and not the BCPM?

no... post-bacc work is added as a seperate category to your undergrad years, and have their own GPA and BCPM GPA... these grades also factor in to your undergrad GPA.
