So this probably can't be good. I've applied to 13 schools, got rejected from 2, and have yet to hear anything from the rest. I applied late and do have a sub-par MCAT but everything (GPA, research, volunteering) is else very good.

Are they just saving my app until they go through all the better applicants or should I expect the rejection letters to start rolling in after winter break is over?
 
Yeah. Don't worry until you start getting rejections. A lot of people are getting interviews now that the school's top choice applicants are choosing which schools they want to attend (and withdrawing from the rest). Expect interviews to come within the next month or so.
 
You could still interview and be put on a few waitlists. People do get accepted off the waitlist all the time. If you don't get interviews by Feb then the school you did not here from will turn into rejections in March. Worry then. Make a reapp plan and reapply. Apply early broad and wisely to strong fit schools.

I would agree with this. Remember that although applying early is always a good thing and can never hurt you, many schools invite for interviews what would be considered "late" in the cycle.
 
Keep your hopes up, invites should continue till Feb/March with interviews themselves ending in April. If you have done something substantial since you submitted your AMCAS, don't be afraid to send them update/interest letters.

Well to be honest, you may have wanted to do more than 13 with a subpar MCAT. But not much to be done about that now.

Its good that you have 11 that you haven't been rejected from yet. Schools will continue to hand out interviews until Feb and acceptances through August. Just keep your hopes up - update if you can and hope for the best.
