My school has a very cool program that lets us study language abroad and get university credits for it. I’m taking Spanish and am considering studying abroad for a semester but my concerns are that I have to discontinue my other activities... (Less volunteering/research hours) Any insights?

Definitely study abroad. Knowing a language and having that experience will trump the loss in volunteering hours

Don't go to Spain for the summer. You'll hate the topless beaches. You'll get bored at the Running of the Bulls. There's hardly anything to see at the Prado, and nobody likes the Dali museum in Figueres. You've seen one cathedral, you've seen them all. It gets old eating tapas and drinking champagne in clubs all night long. Super boring, just skip the whole thing!
