Is there a big difference if I submit now or on May 30th?
I'm going on a medical mission trip next week so i was considering waiting til after to write about it and include it in my application.

AACOMAS is a lot more lenient with submission dates. As long as it's any time before July I believe you should be good because they don't start reviewing applications until later.
