The school i'm applying to starts interviews in November. My supplemental app is due Nov 15 and im currently working on the essay. I planned to submitt on Nov 1st, but i still want to make my essay better. How much difference would it make submitting the app couple days after Nov 1?

In theory, if it is rolling admissions and the first set of interviews is in Nov...the first interview slots could already be filled by people who applied in July. So, do what you need to do to make your app strong...it likely won't make a difference as long as you make the deadline. I would go check the school-specific thread for the school you're looking at to see if people have already been invited for interviews.
