So from what I can gather, it seems SUNY is one of the harder schools to get into. I go to Penn State University, main campus, I have a 3.79 GPA and my oat scores are:

AA: 370
TS: 360
RC:390
QR: 380
Chem: 400
OChem: 370
Physics: 350
Bio 330

I don't have a TON of extracurriculars but I've shadowed an optometrists, tutored and TA'ed a bio lab, What do you think my chances of getting into SUNY, New England, and Salus are? Thanks

Your gpa and OAT scores are strong. If you do have, or if not can get, good LOR's (especially one from an OD) you should be in a good position to get acceptances; however if you've only shadowed one optometrist (I was unclear from your post if this was the case) you definitely should get more shadowing experience. Good work so far! 👍

I've only shadowed one optometrist, but I did for 3 hours a week for an entire summer. Approx 40 hours. And he wrote me a LOR. Do I still need to shadow another optometrist?

That's great! It would still be in your best interest to shadow a few other optometrists (especially in different modes of practice) but yeah, it looks like you should be quite a competetive applicant.
