2 year full-time volunteer work in Brazil (religious and community)

2 semesters research with Mayo Clinic Hospital in Phoenix

4-month internship in hospital emergency department where I shadow medical grand rounds

Shadowed primary care doctor off and on for about 6 months (about 120 hours total)

Some areas for you to check on:

OHSU requires a minimum MCAT score of 32 for OOS applicants per their website. UFlorida is not friendly to OOSers, nor are Davis and Urvine (to variable degrees). UColorado perfers to see 400+ clinical experience hours. UUtah has some fairly stringent expectations as well, so check on that.

Just to clarify, OHSU requires a 32 for an applicant to be considered in one of their mission-based groups, and they review these applicants first regardless of when it was submitted. Since they're notorious for being slow and have a beastly secondary, I'd recommend scratching OHSU along with the other schools not friendly to OOSers mentioned above. You may also consider getting the online MSAR to look at the schools' stats and how friendly they are to OOSers but hurry!
 
Seems like a decent list. Your numbers are great and since you want to stay around the west coast, I'd add;

UC Riverside
USC
Maybe UCLA
COMP (Pomona and Corvallis)
Both western Touros
Perhaps Charles Drew??
